Vegan banana toffee ice cream with crunch

A seriously magic ice cream from Loving Earth that contains their delicious chocolate buckinis!

This dessert is seriously magic. By blending frozen bananas you can create a dairy free soft serve ice cream in minutes. And with a few extra ingredients things get taken up a notch! The coconut sugar adds a decadent toffee like flavour, while the chocolate buckinis give it the finishing guilt free crunch.

Serves 2

INGREDIENTS
- 2 bananas
- ¼ cup of coconut sugar
- ¼ cup activated almonds, chopped
- ¼ cup chocolate buckinis *

METHOD
- Peel bananas and chop into coins, place on a plate and freeze for one to two hours.

- Once frozen solid, place in a food processor and blend on high, scrapping down the sides when the mixture gets stuck.

- Once a paste has formed add the Coconut Sugar and continue blending until an ice cream like consistency is formed.

- Quickly transfer to a bowl and stir through your almonds.

- Place in serving bowls with a handful of Chocolate Buckins plus a further sprinkling of Coconut Sugar.

- Enjoy immediately!
