Dairy-free cheesecake

A creamy, raw, organic cheesecake recipe by Wray Organic made with tasty cashews.

This is a simple, yet easy cake to make, but its complex and unique flavours are guaranteed to impress. It ticks all the right boxes with regards to the varied dietary needs that are prevalent today; it's gluten free, dairy free and has no refined sugars.

Raw Berry Celebration Cake

• 2 1⁄4 cups raw organic macadamias
• 1/3 cup (about 4) organic dates
• 1⁄4 cup raw organic cacao powder
• Blend in a food processor briefly until combined
• 1⁄4 cup Tru Ra organic sweet nibs (or similar)
• Add sweet nibs & blend a few seconds, so it's still crunchy
• Press into a 22 cm round springform cake tin
• Refridgerate for approximately 1 hour

• 3 cups raw organic cashews soaked 2 hours & rinsed
• 1 cup nut milk (home made or an almond or hazelnut brand from your local organic store)
• 1⁄4 cup organic lemon juice
• 2 tbsp organic vanilla extract
• 1/3 cup (about 4) organic dates pitted
• Blend for about 1 minute, until smooth
• 3⁄4 cup organic cacao butter melted
• Blend until combined & silky smooth
• Pour into tin, over the base
• Put in the fridge to set for 2 hours

• 700 grams organic frozen berries. Defrost, drain & save liquid
• Just before serving arrange approximately 2/3 of the berries on top of the filling. Or, once the cake is cut, arrange the berries on each individual serve.
• Blend the remaining berries with the drained liquid & place in a jug. This can be optional to pour on the slices of cake.

• Remove sides of springform tin for ease of cutting.
• The base & filling can be made a few days before & add the topping just before serving.
• Replace the organic frozen berries with fresh fruit of your choice.
