This weekend I used up a bag of frozen spinach that I'd bought on a whim a few months ago. Which highlights another tip for wasting less food - always have a good meal before you go into the food stores, otherwise you'll end up with a trolley full of whatever seems like a great idea to your hungry tummy.

I made these little Spinach Pies with filo pastry and feta. I ended up with too many little filo triangles to eat all at once, so I put the rest away in the freezer.

Normally I'd be a bit lazy and leave the leftovers in the fridge, then forget to eat them before they were too old. If I'm not going to eat the leftovers in time, I might as well have thrown them in the bin right away! So into the freezer they went - most likely I'll have them for lunch at work or on a weekend when I'm too busy to make something.
