The giants of the pasta world have launched a gluten free range which will have even the most dedicated carb-lovers fooled. Rather than releasing gluten free products as soon as the market began to expand, Barilla waited to ensure it had the best formula; it had to look like pasta, cook like pasta and taste just as delicious as their usual range. And the results speak for themselves. Made from rice and corn, the spaghetti, elbows and penne pasta will leave you salivating for more.

Spaghetti dell'Ortolano (Gluten Free Spaghetti with Organic Vegetables)

SERVES 4

Ingredients
400g Barilla gluten free spaghetti
1/3 cup extra virgin olive oil
2 medium organic garlic segments finely sliced
2 medium organic carrots, cut julienne
1 medium organic zucchini, cut julienne
1/4 organic leek, cut julienne
100g organic white mushrooms sliced
100g organic red and yellow peppers, roasted, peeled and sliced
1 small organic eggplant, cut julienne
1 jar Barilla napolitana tomato sauce
3 sprigs organic picked oregano
Small handful organic hand picked basil

For the sauce
1. Gently heat oil in a medium pot. Add leeks, garlic and carrots and cook gently for five minutes.
2. Add eggplant, mushrooms and zucchini and cook a further 5 minutes.
3. Add tomato and cook for 4 minutes.
4. Add roasted capsicums and fresh torn basil.
5. Season to taste, mix well and set aside.

For the pasta
1. Drop the gluten free spaghetti into a pan of abundant boiling salted water. Cook as per instructions, drain and toss immediately with the sauce.
2. Add a swig of extra virgin olive oil, mix well and serve immediately with freshly grated pecorino or parmesan cheese.
