Vegan Sticky Date Pudding

A sweet vegan treat for a cold winter evening.

Sticky Date Pudding

167g dried dates, pitted and chopped
¾ cup water
½ tsp bicarbonate of soda
1 ripe banana
½ cup caster sugar
½ tsp vanilla essence
¾ cups baking flour (organic unbleached)

1. Preheat oven to 180°C and prepare pan (lightly spray cupcake tin with olive oil)
2. In small saucepan, mix dates and water. Bring to boil.
3. Immediately remove from heat and stir in bicarbonate of soda.
4. In large bowl, mash banana well.
5. Mix in caster sugar and vanilla essence. Sieve in flour.
6. Add date mixture.
7. Pour mixture into prepared tin.
8. Bake for approximately 30 minutes or until knife inserted comes out clean.
9. Let stand in tin for ten minutes.

Caramel Sauce

½ cup full fat coconut cream
1 cup brown sugar
¼ tsp salt

1. In small pot, mix sugar and salt. Place over high heat and stir constantly.
2. When mixture is clumpy, reduce to low heat. Stir until mixture is smooth.
3. Slowly add the coconut cream in very small amounts.
4. When all cream has been mixed, turn up the heat to high and boil while stirring slowly.
5. Serve sticky date pudding in slices, topped with caramel sauce.
